Owner Dave Eidenberg was educated at Lakeland College in Sheboygan, Wisconsin, where he studied for a Business Administration degree. Afterwards, Dave studied design at Columbia College and received a foundation of kitchen design knowledge and experience from working for the family business. That company provided food service equipment and planning services for a large segment of ethnic restaurants in Chicago and suburbs during the 1970s and 80s. Many of these kitchens produced most menu items from scratch and required sophisticated large kitchens.
Ken Stefancich joined Right Side Up in 2006 and brought a strong engineering background. He was educated at the University of Illinois, earning a B.S. and specializing in mechanical technology and project management. Ken worked for M & M Mars in the industrial machinery side of food production as an engineer and started with AutoCAD during the early stages in the late 80s. Ken is the consummate engineer and adds precision and accuracy to our planning department.
With this foundation of knowledge Right Side Up was formed pursuing corporate and hospitality industry clientele. Our projects included securing a million dollar contract with Amtrak for custom refrigeration for their dining cars and kitchen, bar and specialty kiosk design-build projects for the Bitter End Yacht Club in the British Virgin Islands.
Dave has written articles for numerous food industry publications and has been a guest lecturer at Harrington College of Design and Roosevelt University for food service facility design. Most recently Dave studied construction management at Oakton Community College. As a result Right Side Up now provides construction management services and specialty sub-contracting services for various food service construction and remodeling projects.
